The Best Vegan Broccoli Cheddar Soup
How many of you find it hard to find yummy alternatives to meals you wish you could eat? I know us vegans struggle with finding what to eat. We worry about eating enough calories or getting enough protein. Well, let me make things a little easier for you and share one of my favorite recipes. My vegan broccoli cheddar soup recipe. This easy recipe is packed with nutrients that will not only give you energy but also help you feel full and not crave any unhealthy snacks. Here is what you need:
Ingredients:
- 3 carrots
- 2 potatoes
- 2 broccoli bunches
- about 1/3 piece of an onion
- one or two garlic heads
- coconut cream
- vegetable broth
- nutritional yeast
- salt
- smoked paprika
- turmeric powder
- basil leaves
- olive oil
CHOP
Start by chopping your carrots and potatoes raw. Then separate the broccoli heads from the stem part. After that, chop your onion and garlic to the desired size.
COOK
Now, we are going to cook our carrots and potatoes. In a large pan, mix your carrots and potatoes with your vegetable broth. Add-in the onions, garlic, basil leaves, salt, turmeric, and a tablespoon of olive oil. (Add to your desired taste) Leave to boil for about 20 minutes or until carrots and potatoes are soft and cooked.
In the meantime, while this cooks, we can cook our broccoli in a separate pan till the broccoli is soft. This should be about 10 minutes. Add a little water or steam it.
Once your broth looks cooked, add in the paprika and nutritional yeast. Stir and cook for about 5 minutes then leave to simmer for about another 5 minutes. The nutritional yeast has a cheesy flavor so we use this instead of cheddar cheese but trust me it tastes pretty similar.
BLEND
Now, we are ready to blend everything and make our soup. CAUTION: Be careful with your broth because it is hot. You can wait a few minutes for it to cool off before placing it in the blender.
In a blender of choice, we are going to add our potatoes and carrot broth, our stem broccoli pieces, and a full can of coconut cream. (I like to microwave the cream for a few minutes before just to get a more liquid consistency) Blend.
EAT
Voila! Your vegan broccoli cheddar soup is ready to be served. I like to add the broccoli on top and serve with Ezequiel toast. Yum!!! Makes for a great lunch or dinner.
