Save the Bananas!
Have you ever overloaded on bananas to the point where they all ripe and get black way too soon? Let’s face it, they are just not that appealing to eat when they are too ripe and spotty but you don’t want to let them go to waste either. So, I decided to put them to good use. I was all out of flour to make banana bread so I decided to go the healthier route and make yummy & soft oatmeal banana cookies.
This is a much healthier alternative because there is no flour, no sugar, and no dairy added. The process is so easy and fast.
Oatmeal Banana Cookies Recipe
- 3 Ripe Bananas
- 3-4 cups of Quick Oats
- 1 Tablespoon of Peanut Butter
- 1 TBS Cinnamon powder
- 1 TBS of Vanilla Extract
- Vegetable Butter or coconut oil
- Smoosh bananas with a fork or smasher and mix in the oats.
2. Add cinnamon, peanut butter and vanilla extract.
I like to add peanut butter because they are more filling. The extra protein is also great and stops me from grabbing unhealthy snacks. However, other great alternatives are dried cranberries or almonds.
Watch out with your peanut butter choice because most contain added sugars. Always check the ingredients and make sure it’s just peanuts. (salt is Ok) I like Trader Joes, creamy unsalted peanut butter. The salted one is also delicious and has no sugar added.
3. Blend Everything together
4. Spread them into small piles and make your cookies. I added some vegetable butter at the bottom so they wouldn’t stick.
5. Place in the oven for about 20 minutes at 345 degrees. I left mine too long so they look a little too brown but they were delicious!
Just as a side note, they will never get crunchy. They are going to be soft no matter how long you leave them in there.
